The first blend from our solera of 100% spontaneously fermented ales started in early 2019. Brewed with Tasmanian grown, malted barley & unmalted spelt, naturally soured by the microorganisms present on the raw spelt. Completed by the aromatic complexity of whole hop flowers from the Derwent Valley (Ella, Willamette & Galaxy). Expect lifted, complex aromatics & superb texture with a long, dry, refreshingly acidic palate.
